Breakfast Burrito
Ingredients:
- 1 Cup Black Beans, rinsed and drained
- 4 Whole Eggs
- 4 Flour Tortillas
- 8 TBSP Guacamole (store-bought or homemade)
- 1 Cup Cooked Brown Rice
- 2 Medium Tomatoes, diced
- ½ Cup Shredded Jack or Mexican Cheese
- Salt and Pepper (to taste)
- 1 TBSP Butter
- Jarred Jalapenos (optional)
Directions:
- Place rinsed beans into saucepan and heat with 1/2 TBSP butter (optional), salt and pepper to taste
- Heat pan, coat pan with remaining butter, whisk eggs together, add to pan and scramble
- Heat tortillas according to package
- Once eggs are cooked, assemble burritos
- Start with 1 warmed tortilla, place 2 TBCSP guacamole, ¼ Cup cooked rice, a quarter of the diced tomato, a quarter of the scrambled eggs, a quarter of heated black beans, sprinkle of cheese and optional jalapeno.
