Breakfast Burrito

Ingredients:

  • 1 Cup Black Beans, rinsed and drained
  • 4 Whole Eggs
  • 4 Flour Tortillas
  • 8 TBSP Guacamole (store-bought or homemade)
  • 1 Cup Cooked Brown Rice
  • 2 Medium Tomatoes, diced
  • ½ Cup Shredded Jack or Mexican Cheese
  • Salt and Pepper (to taste)
  • 1 TBSP Butter
  • Jarred Jalapenos (optional)

Directions:

  1. Place rinsed beans into saucepan and heat with 1/2 TBSP butter (optional), salt and pepper to taste
  2. Heat pan, coat pan with remaining butter, whisk eggs together, add to pan and scramble
  3. Heat tortillas according to package
  4. Once eggs are cooked, assemble burritos
    1. Start with 1 warmed tortilla, place 2 TBCSP guacamole, ¼ Cup cooked rice, a quarter of the diced tomato, a quarter of the scrambled eggs, a quarter of heated black beans, sprinkle of cheese and optional jalapeno.
