Getting to know Simple Servings
What is it?
Simple Servings is our station that is offers meals that do not use most major allergens, including peanut, tree nut, egg, soy, dairy or shellfish, wheat, or gluten. Simple Servings caters to students who may have one or multiple allergies as well as eat Gluten Free. All meals at Simple Servings are naturally free of gluten-containing ingredients. Simple Servings is open Monday-Friday for lunch and dinner and Saturday & Sunday for Dinner.
Can anyone eat there?
Yup! No dining accommodations are required.
Does it serve anything good?
Yes! Most meals include protein, starch, and vegetable. Some examples of meals served at Simple Servings include:
- Beef fajitas with grilled fajita vegetables, brown rice, and Baja black beans
- Greek lemon chicken thighs, roasted Greek potato wedges, steamed fresh baby carrots, and a lemony chickpea salad
- Simple chicken & Mediterranean Quinoa with a Lemon Vinaigrette
What steps do you take to keep the meals safe?
We only use approved recipes that do not contain peanut, tree nut, egg, shellfish, dairy, wheat, or gluten and dedicated equipment, including ovens, dishes, prep areas, and stovetops. Both dry and refrigerated ingredients for Simple Servings are also kept separate.
What food allergy training does the staff take?
All staff members in the dining hall receive Food Allergy training
The Simple Servings Staff receives in-depth allergy training called Allertrain U. They also receive additional training on the how and whys to keep equipment and food safe for students with food allergies.
