Plant-Based Options at Raymond Dining Hall
We know students are becoming more aware of the benefits of plant-based eating. Even if you are not fully vegan or vegetarian, the options of fully plant-based meals are available to you!
Our station called Rustic Roots, is located front and center of Raymond Dining hall. This station is now open daily and offers an array of fully plant-based meals.

Examples of meals served here include:
- Braised Mushroom Enchiladas
- Chickpea “Chorizo” Stuffed Acorn Squash
- Crispy Cauliflower Tacos
- Vegan Sushi Rolls
- Poblano & Sweet Corn Tamales
We are also including more plant-based meals located throughout the dining hall, including deli specials, Comfort entrees, and more!
You can also customize your favorite plant-based meals at U-Cook & Salad Bar
U-cook is our station where students make their own meals! An array of ingredients and sauces are available at the station that you can customize to your liking.

- Quinoa
- Tofu
- Beans
- Edamame
- Seeds
